In the meantime you might want to try this recipe for a chestnut soup, from the kitchen of Aveyron chef, Cyril Lignac:
Ingredients:
200g of sweet chestnuts
35cl milk
5 cl crème fraiche,
1 pinch of cumin,
Celery salt
Black pepper
Split the chestnuts and put them in a pan of boiling water for 10 minutes. Drain them and peel (a job for a day when you are feeling patient!). Feeling less zen? Buy them ready-peeled in a tin and simmer 10 minutes.
Test that they are tender with a fork (they should break up easily). Drain but leave a little of the cooking water.
Add the milk and the creme fraiche and other ingredients and put it all in a blender and blend smoothe.
Reheat for a few minutes and serve.
