Eggnog: the perfectly indulgent festive tipple

This classic festive drink is definitely worth the little effort it takes to prepare. Its rich, spicy and creamy taste is just right for cosy evenings in.

It is believed that the original recipe was created in medieval Europe using ale, and later wine or sherry. It was only with colonists in America that rum started being used instead, as it was cheaper to import from the Caribbean. We’ve got to say, we much prefer the later recipe!

Ingredients

  • Caster sugar, 50g
  • Water, 75ml
  • 4 Egg yolks
  • Vanilla essence, 1 tsp
  • Condensed milk, 397g can
  • Brandy or Dark spiced rum, 100ml
  • *Whole milk – if you want to stretch it further

Recipe

  • Dissolve the sugar in the water by simmering in a pan over a low heat. Once fully dissolved leave to chill.
  • Wisk the egg yolks and then add the vanilla, condensed milk, alcohol and sugar syrup. (Also add the whole milk if you want to stretch the recipe further.)
  • Put the drink in the fridge until chilled. Serve within 24 hours over ice.
